Annie's Birthday Treat - Turnip Fries

One of Annie the Porcupine's favorite foods is Turnip Fries. Yep—turnips. She's so excited to be taught how to make them on her birthday—it's just another way her family celebrates her growing older. It's their tradition. No party hats or glittery banners, just laughter in the kitchen, a big skillet on the stove, and a porcupine who loves crispy veggies almost as much as she loves carrot cake.

Now, if you're thinking turnip fries? really?—trust me, I was right there with you. I thought it was just one of those creative liberties I took with Annie's story. Like asparagus tacos. Sounded fun. Sounded quirky. Sounded like something only a porcupine with good taste would enjoy.

But then... oh my. I did a quick Google search, and wouldn't you know it? Turnip fries are a real thing. A delicious thing. I've eaten turnips raw and pickled before, but now? This might be the only way I want to eat them from here on out.

And who knew? You really can't squeeze blood from a turnip—but maybe frying one in a is a good way to pay off a debt.

Ingredients:

:• 3 to 4 medium turnips, about 3 pounds• 1 T Oil

• 1 t onion powder

• 1 t Garlic Salt

• 1/3 C Parmesan Cheese

• Pinch of paprika

Instructions:

Preheat oven to 450.

1.      Peel and slice your turnips into matchsticks.

2.      Add all the seasoning ingredients into a gallon Ziplock bag. Mix together.

3.      Spread out on a greased baking sheet. Bake for 25 minutes, or until they're golden-brown and fork tender.

With a little more digging, I've discovered that turnip fries aren't just tasty—they're also a fantastic low-carb alternative to traditional French fries. They're high in fiber and a smart choice for anyone looking to lower blood sugar or add more veggies to their plate. Seriously... who knew turnips were this versatile? Let me know if you have tried Turnip Fries.
