There's something about an unexpected detour that turns into a little moment of magic.
I went for a drive with no real destination, just needing a change of scenery and some time with the dog. And somehow, I ended up at Tim Hortons. And there it was. Not just coffee... but a whole carrot cake experience: Carrot Cake Latte, Carrot Cake Cold Brew, and Carrot Cake Iced Capp.
I mean... excuse me??
When did carrot cake become the new craze outside of the Annie the Porcupine world? And more importantly... why do I suddenly feel like I need to try all of them?
Then I read the description: sweet carrot cake spices, cream cheese topping, and salted caramel.
This isn't coffee. This is cake pretending to be coffee.
The warm spices that feel like home, the cream cheese frosting that makes carrot cake unforgettable, and that little hint of salted caramel that takes it completely over the top.
And suddenly it makes sense why I can't stop thinking about it.
What if this is the spring version of pumpkin spice?
We wait all year for pumpkin spice in the fall. It shows up, takes over our lives, and then disappears just as quickly. But carrot cake? That's spring. That's light, sweet, spiced comfort that feels just right this time of year.
So why is this just a "limited time" thing?
Because now I'm intrigued... and slightly obsessed. And if there's one thing I've learned, it's this: if something is only here for a short time, you figure out how to make it last a little longer.
So of course, I did what any curious (and slightly obsessed) person would do...
I decided we're not waiting for this to disappear from the menu.
We're making it at home.
DIY Carrot Cake Latte (Spring in a Cup)
What you need:1 C strong coffee or espresso½ C milk (any kind)2 T brown sugar¼ t cinnamonpinch of ginger + pinch of clove⅛ t vanillawhipped creamdrizzle of salted caramel
How to make it:
Brew your coffee or espresso.
Warm the milk and stir in the brown sugar, spices, and vanilla.
Combine with your coffee and give it a good stir.
Top with whipped cream and drizzle with salted caramel.
Take a sip and tell me that doesn't taste like dessert.
Because honestly? It might be even better knowing you can make it whenever you want.
