Carrot Ginger Lemonade

Last week, it was so hot outside! And all I could think about was: how would Annie the Porcupine cool off on a sizzling summer day? I can picture her lounging in the shade, with sparkly star shaped sunglasses and a twisty straw.


So, I did what any curious writer would do—I googled carrot-themed drinks.


What I found? A refreshing twist on lemonade... or maybe it's a twist on carrot cake? Honestly, I don't know. But what I do know is that I can't wait to try it—and yes, I've already added everything to my next Click List order.

Ingredients:

  • 3 large carrots, peeled and chopped

  • 2 lemons, peeled and chopped (make sure you take off the white parts)

  • 1-inch piece of fresh ginger, peeled and sliced

  • 1 C freshly squeezed lemon juice (about 4–6 lemons)

  • 4 C cold water

  • 1/2 to 3/4 C honey or maple syrup (adjust to taste)

  • Ice Cubes


Instructions:

  1. Blend carrots, lemon and ginger with 1 cup of water, then strain through a fine sieve or cheesecloth.

    • You can use a juicer, if you have one.

  2. In a large pitcher, mix the juice with the sweetener. Stir until the sweetener dissolves.

  3. Pour in the rest of the water and stir well. Taste and adjust sweetness or lemon as desired.

  4. Serve over ice with optional lemon slices or mint leaves.
