Annie the Porcupine's Crunchy Snack Adventures

Annie the Porcupine loves her fruits and veggies. From sweet carrot cake to green bean casserole, she's always munching on something wholesome. But even a veggie-loving porcupine sometimes wants that salty, crunchy snack. Lucky for Annie, she's already experimented with all kinds of crunchy goodies like banana chips and turnip fries, and now she's discovering carrot chips!

Carrot Chips: Sweet, Salty, Crunchy

Ingredients:

• 4–5 large carrots, peeled

• 1–2 tablespoons olive oil

• Salt to taste

• Optional: smoked paprika, garlic powder, or a pinch of chili for extra flavor

Instructions:

1. Preheat oven to 375°F (190°C).

2. Slice carrots super thin. A mandoline slicer works best.

3. Toss with olive oil, salt, and optional spices.

4. Spread in a single layer on a parchment-lined baking sheet.

5. Bake 15–20 minutes, checking often, until edges are golden and crisp.

6. Cool completely. The chips get crunchier as they sit.

Carrot chips are Annie's latest favorite, her veggie answer to potato chips. They're crunchy, salty, and full of natural sweetness.
