While Banana Bread is a well-known treat, banana cookies are a delightful discovery. I believed that opting for banana cookies would be a great choice for Annie and Julie to bake with Annie's mom. Consequently, I added banana cookies to my book of recipes. In our household, the pattern of buying bananas and not consuming them quickly is quite common. Therefore, I often have ripe bananas frozen, ready to be pulled out and mashed, ensuring a swift solution for a delightful cookie fix. Ingredients: 2 Ripe Bananas (Mashed) ½ C Butter (Softened) 1 C Sugar
1 Egg 2 C Flour ½ t Baking Soda ¼ t Salt ½ t Cinnamon ½ C Oats ½ C nuts (This is optional, but I think it is a must-have) ½ C chocolate chips (This is also optional, but I think it has to be added.)
Directions: 1. Preheat Oven to 350. Grease baking sheet 2. Cream butter and sugar until light and fluffy. 3. Beat in bananas, egg and vanilla. 4. In a separate bowl, mix flour, baking soda, salt and cinnamon. 5. Gradually add the dry ingredients to the wet ingredients, mixing until combined. 6. Fold in the oats, and nuts/chips. 7. Drop rounded tablespoons of dough onto sheet, spacing about 2 inches apart. 8. Bake for 10 to 12 minutes. (Edges should be golden brown) 9. Enjoy with milk!
